Bacon

My order from Scott Hams arrived today.

This is one full slab of bacon.

I also got cracklin's, jowl bacon, ham, smoked sausage, and fruit butters.

Everything smells and looks so good I don't know where to start. The kids are home from school today because of the snow and Jake must have sniffed the box for 20 minutes--did I mention before that he's a huge fan of bacon? :)

It's time to break some of this down into FoodSaver bags and toss it in the freezer, bag some and toss it in the 'fridge, and cook some up.

Looks like it might be time for some buttermilk cornbread...

Mmmm that looks good! That's the perfect bacon to take canoeing and camping - just slice some off and fry it up, or throw some in the pot.

Absolutely!

You should see the jowl bacon.

Any of it'll keep without refrigeration but could probably go longer if you can keep it cool.

The neatest thing about this bacon is that the fat goes completely clear once it warms up. That must have something to do with the lack of Nitrates, Nitrites, and MSG in the meat.

The smell here in the kitchen is just unreal.
